Sweet Olive Oil Dressing

 ¼ cup raw honey
 ½ cup apple cider vinegar (with the mother)
 ¾ cup olive oil
 2 tbsp parsley, finely chopped
 1 garlice clove, finely chopped
 1 tsp celtic salt
 1 tsp fresh ground pepper

This recipe is my families go-to dressing. I kid you not when I say we use it every week in one way or another. It's versatile and so delicious.

Both olive oil and vinegar contain high levels of the plant-based antioxidants known as polyphenols that are believed to reduce inflammation. Olive oil is high in vitamin E, another antioxidant that protects fats from damage by free radicals. Vinegar is fermented. It has antioxidant properties that help in digestion. Vinegar has been shown to reduce glycemic response in complex carbohydrates.

It can be used as a salad dressing or it can be embellished, by adding a few more ingredients for marinating meat. For instance, add in lemon pepper in place of the regular pepper and a squeeze of a half a fresh lemon. This becomes perfect to marinate chicken. Create your own from the basic recipe. The skies the limit!

Directions: To create this dressing, just mix all the ingredients together and shake or blend vigorously. I like to put it all into a pretty vinaigrette glass container and then vigorously shake the dressing until it's all combined.

Note: Whenever possible, I use all organic ingredients.
