This is a quick little recipe. It's delicious on top of your favorite fish, on top of little toasted sourdough bread, on top of deviled eggs, or placed on cucumber rounds for a tasty and pretty summer appetizer. Let your imagination run!
Sun-dried tomatoes are antioxidant rich. These antioxidants can neutralize free radicals and lower inflammation. Sun-dried tomatos are packed with vitamin C and vitamin A, along with lycopene, lutein and zeaxanthin.
In a food processor, combine the sun-dried tomatoes, curry paste, mayo, and oregano leaves. Process until well combined. Add salt and pepper to taste.
