14 Nov Sriracha Lime Lettuce Wraps

When time is short, I like this dish as it's a fast, delicious dinner option.
Tangy beef lettuce wraps are a delicious way to fill you up without getting all carb-craving crazy, yes, it's a keto dish! Make sure to have sriracha, lime and fish sauce on hand as these are unique to some kitchens.
My lettuce wraps are fun to eat, pretty, keto friendly (yes, food when you are trying to lose weight needs to look good too), and work really well for dinner parties.
While sriracha is hot, this recipe isn’t terribly spicy- but I suggest starting with a little sriracha and adding more as you go so you don’t end up with something spicier than you prefer. As the saying goes, "Some like it hot!"
Sauce Ingredients:
lime juice and zest
sriracha
water
fish sauce
honey
garlic and ginger
Mix together and set aside
Meat:
Brown the ground beef and season with salt and pepper. (please use a good salt like a Himalayan or Celtic sea salt). Discard most of the fat from the meat. Add in the green onion, bell pepper and a splash of the oil. Make a circular opening in the center of the meat once it's browned. This space is where you will sauté the veggies.
Sauté the veggies, (in the center of the meat) until soft, about 3 to 4 minutes. Add back in your sauce and simmer until the liquid has cooked down.
Serve in the lettuce, creating the lettuce wraps. Garnish with parsley or cilantro if you wish.
