Cabbage Carrot Salad

Yields4 Servings

 ½ Head of raw red cabbage, shredded
 ½ Head of raw white cabbage, shredded
 4 Large carrots, shredded
 4 Green onions, chopped thin
 ½ cup Chopped fresh parsley
 1 tbsp Dijon mustard
 1 Garlic clove, minced
  cup Extra virgin olive oil
 ¼ cup Organic apple cider vinegar (with the mother)
 1 Fresh lemon, juice and zest
 Salt and pepper to taste
 1 tbsp Raw honey

This is so, so, so very pretty on a plate! It'll add a bouquet of color to enhance your families hunger palet. So easy.

Place shredded cabbage, carrots, green onions, and parsley in a large salad bowl. Set aside.
In a mixing bowl, whisk together the dijon mustard, garlic, olive oil, apple cider vinegar, lemon juice, zest, honey, salt, and pepper. Whisk until combined. Pour dressing over the cabbage mixture and toss to combine.
Taste for seasonings and adjust accordingly. For presentation, garnish with a little bit more chopped parsley.
