Peanut Butter Bites

Yields18 Servings
 1 cup creamy organic (no sugar) peanut butter
 ¼ cup raw honey or pure maple syrup
 1 ½ tsp vanilla
 1 ¼ cups old fashioned oats
 3 tbsp chia seeds
 ¼ cup coconut flakes (unsweetened)
 ¼ cup pumpkin seeds
 ¾ cup mimi chocolate chips
 ¼ tsp celtic sea salt
 flakey sea salt for topping (if desired)

These peanut butter bites can be a food that supports and boosts metabolism and fat loss if you consume them as part of a proper balanced diet. They are protein packed and delicious. I am going to emphasize using an organic peanut butter with no added sugar for the healthiest bites. Alternative nut butters, like almond butter, may be easily substituted.

Directions:

1. In a large bowl mix all the ingredients together.
2. Roll into 2 inch balls and set onto waxed paper.
3. Top with a little of the sea salt if so desired.
4. Before eating, allow them to firm in the refrigerator.

These are easy to freeze. I place them into quart freezer bags lining them up like soldiers three to a line. Don't pile them on top of each other. Pull them out for a fast snack. These thaw in mere moments.

I use all organic ingredients whenever possible.
