This is the best comfort food recipe that you can make using grass-fed ground beef. It comes out juicy every time, and it seriously couldn’t be easier. Keto friendly because there is no bread crumbs involved, rather flax meal is used. This meatloaf is a family favorite that I am asked for over and over again. I hope you'll enjoy this easy to make main dish and consider inviting your neighbors over for supper.
Grass-fed beef has significantly more beneficial omega-3 fatty acids and more conjugated linoleic acid (CLA) than grain-fed beef. Grass-fed beef is a red meat considered to be one of the best protein foods around. It is also higher in vitamin A and E compared to grain-fed beef.
Meatloaf has had a bad rap in the past… which is unfair because it’s so delicious when prepared properly!
BIG TIPS:
1. Do not over-work the meat! Overworking makes the meat tough.
2. Let the meat loaf rest for at least 10 minutes before cutting. This will keep it perfectly juicy.
Directions:
1. Preheat oven to 350 degrees. Meatloaf will need to cook at 350 degrees for about 50-60 minutes.
2. Butter a glass meatloaf pan.
3. In a large bowl add the first 6 ingredients. Just mix until slightly incorporated.
4. Add in the rest of the ingredients.
5. Using a clean hand, mix gently until all incorporated.
6. Form the mixture into a log and fit it inside the buttered loaf pan.
-Top the meatloaf with ketchup if so desired. I typically do.
7. Bake for about 50-60 minutes.
8. Rest the meatloaf for 10-15 minutes before slicing and serving.
