
05 Feb Fresh Greek Salad

This salad is fresh and delicious. A true greek salad has no lettuce - who knew! My family loves this easy to make nutrient dense salad.
This colorful salad is eye catching delicious and it's especially rich in beneficial antioxidants. The salad is a cornucopia of nutrients. It contains flavonoids and tannins which are especially effective at blocking harmful free radicals.
Directions:
1. Wash and peel the veggies.
2. If you like, peel off the cucumber skin. I personally like the skin peeled off.
3. Chop all the rest of the ingredients to be about the same size.
4. Add the chopped feta.
5. Toss gently.
6. Salt and pepper to taste.
Salad dressing:
3/4 cup olive oil.
4 tbs fresh lemon juice
1 tsp dried oregano
1/2 tsp raw honey
Note: Whenever possible, I use all organic ingredients.
