 1 4.5 or 5 lb duck
 2 tsp celtic salt
 2 tsp fresh ground black pepper
 1 tsp paprika
 2 fresh garlic cloves minced
 ½ cup melted butter

A duck roasted properly will literally melt in your mouth. It's a nice variation to everyday chicken.

Duck is loaded with B vitamins and the fat soluable vitamins A, K, and E. If you need extra selenium in your diet duck is a perfect choice. And, it's a rich source of protein. Protein builds and repairs the body’s cells, building muscle. It enhances the immune system and provides important proteins for structure and the overall health of skin, hair, and nails Some proteins even act as enzymes.

My family is always a fan of roasted duck. The delectable aroma will bring the fussiest of eaters to your table! Duck also makes a wonderful and beautiful holiday meal.

Directions:
-Preheat oven to 375 degrees F.
-Rub salt, pepper, minced galic, and paprika into the skin of the duck.
-Place in a roasting pan.
-Roast duck in preheated oven for 1 hour.
-Spoon 1/4 cup melted butter over bird, and continue cooking for 45 more minutes.
-Spoon remaining 1/4 cup melted butter over duck, and cook for 15 more minutes, or until golden brown.
Total roasting time of about 2 hours and a few minutes.

Note: I always use organic ingredients whenever possible
