Easy Chicken Salad

 2 Cooked and shredded chicken breasts
 1 Medium onion, chopped
 2 Large stalks celery, chopped
 1 tsp Salt
 1 tsp Pepper
 2 tbsp Dijon mustard
 1 tsp Fresh lemon juice
 1 cup Mayo (homemade or choose one made with a healthy oil)
 ½ cup Chopped walnuts (optional)
 2 tbsp Chopped parsley

Often, you will find this recipe in my refrigerator the day after I've cooked a large roasted chicken for dinner. The leftover meat makes a wonderful lunch for the following afternoon. My daughters especially enjoy eating this recipe. It's super easy and can easily be diversified with your favorite ingredients like grapes, almonds or olives.

Mix all ingredients together tossing gently. Feel free to add extra mayo if you like it for a creamier texture. Chill well for at least 2 hours.

I like to serve it on a bed of lettuce or a fresh buttery croissant.

Note: I use all organic ingredients whenever possible.
