25 Feb Creamy Tahini Dressing

This is a nice fresh twist to traditional dressings. Fast and easy, it has only 2-steps to make! It is nutrient dense, smooth, and oh-so delicious! Use it as a dip for fresh veggies or put it on your salad made especially with red and white cabbage, cucumber, radish, bell peppers, onions and your favorite sturdy lettuce.
Tahini sauce is made from fresh ground sesame seeds, which we know are super nutritious. You'll receive B vitamins like thiamine, along with minerals, including magnesium, copper, phosphorus, manganese, iron, copper, and zinc. Tahini is also known to be heart healthy. Go ahead and indulge!
Directions:
1. Combine the olive oil, tahini, lemon juice, mustard, raw honey, salt, and black pepper. Whisk until thoroughly blended and smooth.
2. Add the cold water, and whisk. The dressing should become smooth and creamy. Taste it. Add more lemon juice or pepper, if desired. If your dressing is too thick to drizzle, whisk in more cold water - 1 tablespoon at a time. Serve and enjoy.
Do stir in a couple of tablespoons of your favorite finely chopped fresh herbs (dill, basil, mint, cilantro, or parsley) to make a fabulous herbed dressing.
Note: I use all organic ingredients whenever possible.
