Creamy Skillet Chicken

Yields6 Servings
 6 organic chicken thighs, bone in
 3 tbsp unsalted butter
 4 large fresh garlic sections, minced
 1 tbsp fresh basil, chopped
 1 tbsp fresh parsley, chopped
 1 tbsp fresh oregano, chopped
 3 oz jar of sun-dried tomato, chopped (drain oil).
 1 cup homemade bone broth or boxed chicken broth
 ¾ cup heavy cream or 1/2 n 1/2
 ¾ cup fresh grated parmesan cheese
 salt and pepper to taste

If your mouth is craving a satiating savory chicken recipe, this is the dinner for you! My family cheers when my skillet chicken hits the table! You might want to make double - I am certain that you will not have any leftovers. We never do!

This is a rich protein dish that will keep you family well satiated. Chicken lends itself to muscle development. Protein reduces hunger, helping you eat less. Bone broth is packed with vitamins and minerals. This entire dish is not only delicious but considered delightfully nutrient dense. The garlic and herbs add powerful benefit and have been known to reduce inflammation.

Sun-dried tomatoes are of course antioxidant rich. They are packed with lutein, zeaxanthin, and lycopene. Lutein and zeaxanthin protect your eyes from cataracts and macular degeneration.

I like to cook up quinoa and serve the chicken and sauce on top. Add a side salad or your favorite steamed veggies for a beautiful side dish. Watch out, your family just might shout, "Winner, winner chicken dinner," at the very first bite!

Instructions:

1. In a large skillet melt butter over medium heat. Add chicken thighs and cook 5-7 minutes on each side until golden brown. Salt and pepper to taste. Transfer to a baking dish and bake at 350 degrees for 25 minutes while you make the sauce.

2. Add garlic, sun dried tomatoes, chicken broth, heavy cream, and 2/3 cup parmesan cheese to pan and stir to combine. Bring to a boil, and continue to stir periodically until thickened and creamy about 7 minutes. Stir in the herbs.

3. Return the chicken to pan and spoon some of the sauce over the chicken. Top with cracked black pepper, grated parmesan cheese, and serve.

Note: I use all organic ingredients whenever possible.
