Cran Apple Salad

 6 cups Organic fresh baby spinich
 1 Granny Smith apple, sliced thin
 ½ cup Pomegranate arils
  cup Dried cranberries
  cup Goat cheeses, crumbled
 ¼ cup Olive Oil
 ¼ cup Apple cider vinegar
 1 Fresh whole lemon, juiced and zest
 1 tbsp Raw honey
 1 tbsp Chia seeds
 1 cup Walnuts whole or chopped

This wholesome, colorful salad is as nutrient dense as it is beautiful. We eat this all year long. Enjoy!

To make the vinaigrette, whisk together olive oil, apple cider vinegar, lemon juice, lemon zest, honey and chia seeds in a small bowl; set aside.
To assemble the salad, place spinach in a large bowl; top with apple, walnuts, pomegranate arils, cranberries, and goat cheese. Pour the dressing on top of the salad and toss gently to combine.
Serve promptly.
