This is a specialty dessert in my family. Most recently, we enjoyed it at our Easter celebration. It's a perfect springtime dessert with a beautiful deep orange color. This dessert is always moist and always delicious.
When Clementine Cutie Cake is baking, the aroma is seriously intoxicating. For a cake, this one is not only moist and delicious, it is also packed with vitamins and minerals. How refreshing!
Clementines are potent antioxidants. These protect your body against free radicals. Clementines replenish your body with remarkable amounts of B vitamins, folate, calcium, iron, potassium, copper, and other nutrients.
Almond flour is grain-free and a rich source of protein made from ground almonds. Almonds' have a low glycemic property and high magnesium content. This combination may actually help control blood sugar. It's also gluten-free, making almond flour a good baking choice for those who can't tolerate wheat or gluten.
Pure maple syrup (real) is loaded with about 24 antioxidants. It's full of polysaccharides, organic acids, amino acids, vitamins, and minerals. As a sweetener, maple syrup has a low glycemic index.
Directions:
1. Place clean, washed, unpeeled, clementines in a large pot. Cover them with filtered water. They will float and that's okay! Cover them and simmer for 2 hours. Now and then, peek into the pot to make sure the water level is sufficient.
2. Remove the clementines from the pot and let them cool. DO NOT PEEL.
3. Preheat your oven to 375 degrees.
4. Cut the clementines in half (leaving the peel on) and place them into a blender. Blend them until very smooth.
5. Add Eggs one at a time.
6. Add in maple syrup, vanilla, cinnamon. Blend.
7. Add the almond flour and baking soda. Blend.
8. Pour the mixture into a well buttered and parchment lined spring-form pan.
9. Bake 35-40 minutes. (The smell will be irresistible!)
I typically serve this with a dollop of homemade fresh whipped cream - made from whole cream or I use a simple drizzle of powdered sugar and fresh citrus juice.
Note: I use all organic ingredients whenever possible.
