Chia seeds are among the healthiest foods in the world and these tiny seeds pack a powerful nutritional punch.
Often, this is my breakfast. I make it the evening before bed, put it into the refergerator, and enjoy some of this healthy pudding with fresh organic fruit and nuts. Chia pudding is good for blood sugar control, cholesterol levels, and gut health. It's high in protein which is good for building lean muscle. Another benefit is that chia contains healthy omega3 fats to help you feel satiated and full.
For another variation use tea in place of the coconut or almond milk! My friend Joan, mentioned Little Berry Hibiscus Tea from Just Tea, because it's packed with antioxidants. Wonderful! Your kiddos will love it too, And the best part, here's absoultley NO SUGAR (minus the fruit which is optional).
Directions:
Start with one mason jar.
Add almond milk or coconut milk (your choice) and the vanilla.
Add in the chia seeds.
Mix with a spoon and set aside for a minute or two.
Mix it again. This will ensure it doesn’t separate when you refrigerate. Make sure there are no clumps and don’t refrigerate it until it’s clump-free. Once cooled it sets up and is ready to eat within an hour or so. However, I've eaten it at room temperature once it has fully set and is thick.
Note: Whenever possible I use all organic ingredients.
