This salad is beautifully striking. The red, green, and white contrast make it a gorgeous dish to serve at your holiday events. Delightfully simple to make. You can even prep the components a day or two in advance!

Beets boast an impressive nutrient dense profile. Beets have a high vitamin, and mineral content. They are a low-calorie food that is still filling, helping with weight balance while providing many essential nutrients.

These dark red beauties are great for your gallbladder health and gut. They boast a good source of folate, manganese, and they are high in vitamin C, potassium, iron, magnesium, and zinc.

Instructions;

Add the beets, onion, roasted walnuts and parsley to a large pretty bowl or serving dish. Toss gently. A little at a time, drizzle olive oil over the salad to making a nice sheen. Season with salt and pepper and toss. Drizzle the aged balsamic vinegar over the salad to your taste preference. Lastly, add in small chunks of the feta cheese all over the salad.

Note: I use organic ingredients whenever possible.
